  5. Fresh coriander, to serve
  6. 1 big clean crimson chilli, deseeded, finely chopped
  7. 1 clean purple birdseye chilli, deseeded, finely chopped
  8. 2 garlic cloves, chopped
  9. Pinch of salt
  10. 2 tablespoons palm sugar, coarsely grated
  11. 2 tablespoons Squid Brand Fish Sauce
  12. 2 tablespoons lime juice
  13. 1 tablespoon clean coriander, chopped

  1. Place the prawns in a bowl. Add the sugar and salt and toss to mix. Set apart for 10 minutes to broaden the flavours.
  2. Meanwhile, for the nam jim dressing, region the chillies, garlic and salt in a mortar and pound with a pestle until a hard paste bureaucracy. Transfer to a bowl. Add the palm sugar, fish sauce, lime juice and chopped coriander and stir until the sugar dissolves.
