  1. 1kg (about 12) small wiped clean calamari tubes (hoods)
  2. Olive oil, to oil
  3. 2 yellow capsicums, quartered, deseeded, sliced
  4. 1 huge pink capsicum, quartered, deseeded, sliced
  5. 150g infant spinach leaves, washed, dried
  6. four vine-ripened tomatoes, reduce into eighths
  7. Salt & freshly ground black pepper
  8. 3 lemons, juiced
  9. 80ml (1/3 cup) olive oil
  10. 1/four cup clean thyme leaves
  11. 2 large clean crimson chillies, deseeded, finely chopped
  12. 1 teaspoon sesame oil
  13. Salt & freshly ground black pepper

  1. To make the marinade, integrate the lemon juice, olive oil, thyme, chillies and sesame oil in a large airtight box. Season with salt and pepper.
  2. Cut each calamari tube into quarters lengthways. Score the interior surface of every in a diamond sample (dont cut all of the way thru). Cut each zone into three even portions. Add the calamari to the marinade and toss to coat. Place inside the fridge for 1 hour to marinate (or longer if time permits).

  5. Place calamari and any juices in a big serving bowl with the capsicums, spinach and tomatoes. Season with salt and pepper, and toss lightly to combine. Serve without delay.
